Course Description: Basic concepts of wine technology and prepares them to meet the challenges of the Wine industry. The course will cover various concepts of wine technology including details of raw materials used in wine production as well as the fermentation process related to the wine industry.  Students will also be introduced to the process of wine aging and quality aspects of red wine production. 

Course Outcomes

CO1: Understand the different wine types, its history and biochemical pathways involved in wine fermentation 

CO2: Know the raw materials used for wine production and wine fermentation for red and rose wine production 

CO3: Know the wine aging process and its importance as well as they will be introduced to quality aspects of wine production

 

Syllabus

Chapter 1: History, Scope and Importance of wine production                       (2 Hours)

Chapter 2: Equipment and Raw materials used in wine production                 (2 Hours)

Chapter 3: Procedure involved in wine production                                             (2 Hours)

Chapter 4: Role of external and internal conditions, fermentation process, sterilization, 

                   Filtrations, microorganism in fermentation and parameters that need to be 

                     Monitored during fermentation.                                                              (4 Hours)

Chapter 5:  Appearance, aroma, flavour, taste, composition and health benefits of wine

Chapter 6:  Wine quality tests, packaging, storing and marketing                       (2 Hours)

  1. Materials and equipment in wine production.
  2. Demonstration of producing homemade wine
